Build range, confidence, and a real understanding of bread

Bread Camp is a hands-on, immersive five-day course focused on building confidence and range across a wide spectrum of bread styles — from high-hydration sourdoughs and ancient grain loaves to enriched doughs, bagels, brioche, and pizza.

Each day builds on the last. You'll bake with freshly stone-milled flour milled in-house at Rise, work with heirloom grains like spelt, einkorn, and Red Fife, and develop the intuition to make better decisions in real time — not just follow a recipe.

The learning environment is intentionally interactive, with plenty of time for questions, troubleshooting, and discussion. Bread Camp takes place in Chilliwack, BC — about 90 minutes from Vancouver.

Bake with intention

Sourdough Mastery

Create and maintain an active starter. Work with high-hydration country sourdoughs, rye, whole-grain, and ancient grain varieties from einkorn to Red Fife.

Freshly Milled Flour

Bake with flour milled in-house at Rise Baking Lab. Understand how freshly milled grain behaves differently and how to adapt your process accordingly.

Yeasted & Enriched Doughs

Master baguettes, ciabatta, focaccia, challah, brioche, bagels, pretzels, and more — using poolish, levain, and mixed-method approaches.

Specialty Techniques

Scalds, soakers, and porridge breads. Sprouted grains. Decorative braiding. Advanced scoring. Methods that expand your creative and technical range.

Baker's Math & Formulas

Learn to think in percentages, adjust and develop your own recipes, understand flour selection, hydration, fermentation variables, and dough behavior.

Real-World Application

How to apply what you've learned at home, in a micro-bakery, or in production. Practical baking decisions that go beyond any single recipe.

Mark & Luis

Mark and Luis are the co-founders of Rise Baking Lab and the lead instructors at Bread Camp. With deep roots in professional baking and a combined passion for teaching, they've built Rise into one of Canada's most respected hands-on baking schools.

Their teaching style is open, generous, and practical — focused on building real understanding rather than just getting through a recipe list. Students consistently describe the learning environment as collaborative, encouraging, and genuinely fun.

Rise Baking Lab is located in Chilliwack, BC, in the beautiful Fraser Valley. All instruction is in English, and international students are warmly welcomed.

Schedule

Five full days, typically 9am–3pm each day. The schedule includes hands-on baking, discussion, and time for questions. One pizza dinner with the class is included during the week.

Common questions

Bread Camp is designed for serious home bakers, aspiring bakery or micro-bakery owners, and professionals already working in the industry. Prior baking experience is helpful, but the course is structured to support students across a range of levels through hands-on learning.

Bread Camp is fully hands-on. Students mix, shape, and bake throughout the week while working in small groups with close instructor guidance. There's plenty of time each day for questions, discussion, and troubleshooting.

All five days of instruction, all ingredients and equipment, and one pizza dinner with the class. Accommodation and travel are not included. We recommend wearing comfortable clothing and closed-toe shoes.

The menu shown is a sample — breads vary slightly each session depending on the group, ingredients, and direction of learning. You can expect a wide range of naturally leavened and yeasted breads across the week.

Yes. Many participants attend while planning a bakery or micro-bakery. While the course is focused on baking and technique, there is time throughout the week to discuss production, workflow, scaling, and real-world considerations.

Yes. Uber is available throughout Chilliwack ($8–15 around town). Choosing accommodations close to the bakery makes this easier. We're happy to answer questions about getting around in advance.
